Our granola is one of our most requested recipes from our guests, we are thrilled to finally share it!

One of the [ many ] reasons we love this granola is for how versatile it is. You need a few simple staples of oats, any variety of nuts + seeds, some coconut oil, maple syrup and cinnamon [ you can’t forget the cinnamon! ] plus a pinch of salt and you’ve got yourself a batch of granola that will last you a week or two [ if you are lucky ]. No two batches of granola are the same as we use this as a way to use up whatever we have in our pantry.

INGREDIENTS NEEDED:

GF oats [ 2 cups ]

pecans [ 3/4 cup ]

almonds [ 1 cup ]

pumpkin seeds [ 1 cup ]

sunflower seeds [ 1 cup ]

rasins [ 1 cup ]

coconut oil [ 3 tbsp ]

maple syrup [ 3 tbsp ]

cinnamon [ 2 tsp ]

salt [ pinch ]


Preheat your oven to 375. Chop up your pecans + almonds, either with a food processor or with a knife and cutting board. [ Brazil nuts, walnuts, cashews, pistachios all work really well here! Use whatever you've got in your pantry. ] Combine with oats + pumpkin seeds + sunflower seeds in a large bowl [ we also love using coconut flakes + hemp seeds + chia seeds if we have them on hand ]. Melt coconut oil + maple syrup + cinnamon + salt and stir in with your seed and nut mixture. Spread out on a baking tray and bake for 40 minutes. Be sure to stir every 7-10 minutes to prevent burning.
